AN E-MAIL subject that says, “’Baci Perugina’ COMING SOON!” will be quite hard to top.  And to read it first thing on a Friday morning…  well, it felt so good it was almost like bathing in a pool of gooey chocolate.  No, more like breaking through the shiny crust of dark chocolate, all the way through the center to revel in luscious hazelnuts!  I could hear Dean Martin in my head singing, “That’s Amore!”

To my good friend, the Pietro, grazie mille!  I’m breathless in anticipation of these Italian chocolates.  Gotta have my Baci!  Soon!

And to Brother, through whose kindness these chocolates will make it across continents, thanks a lot!  (And don’t you dare forget that you promised a separate batch of Baci Perugina from you!  Hahaha!)

Diet goes belly-up over my friend’s pork belly

WOLFGANG PUCK once said, “In cooking, if you cannot even season the simplest thing, why cook?”   And I have to say, I couldn’t agree more.  I’ve had his angel hair pomodoro at Macy’s in San Francisco and I can vouch that he breathes life to the challenge he himself posed.

In the Philippine setting, I would consider pork to be one of the simplest things, if not the simplest.  And frankly, while I’ve enjoyed it in its various incarnations – adobo, picadillo, afritada, menudo, sinigang – I find that serving it devoid of any sauce or broth is actually the true test of the cook’s skill.

And at a friend’s baby boy’s second month birthday party, I came across what I honestly consider to be one of the best-tasting grilled pork I’ve ever had.  It was just the most perfectly seasoned cuts of pork belly, seared with grill marks that accentuated the balance of sweet, salty, and citrusy hints that got so ingrained into the layer of fat and meat.

While pride in my own skills have prevented me from asking for recipes from friends, that night in the party, I had to pull my good friend aside and demand for a copy of the recipe.  The flavors thoroughly worked in into her pork belly dish but their seeming stark simplicity left me at a loss in recreating the ingredients and the procedure in my head.  She’s been quite busy at work – she’s one of our Planning Managers – so I had to sheepishly follow up.

I finally got my hands on her recipe and just had to make it over the weekend.  The result?  I was a rock star at home.  I made enough to last a couple of days.  As with any really good marinades, the pork turned out great whether grilled or fried. And as how she served it at the party, I made a cucumber salad to go with it, along with a soy sauce-calamansi-leeks dipping sauce.

The pork in Ms. Jo's special marinade! I used a combination of the "liempo" (pork belly) cuts and what the meat guy called as "country-style" cut that didn't have the strip of fat at all!

 

This one got fried! That's a beautiful strip of pork belly sizzling in there!

 

In place of grill marks from the barbie, caramelization from the pan is great!

Three panels of memories

ONE OF my favorite home accents – I caution to call this one “furniture” – is my seven-year-old Aaron Brothers two-tone, solid wood, three-panel floorscreen.  It traveled 11,257 kilometers to get home with me.  And through the years, its fifteen 8”x10” frames have helped chronicle my innermost thoughts.

It’s very heavy, being solid wood.  That’s why it’s quite a challenge to move around.  The three panels are joined by two-way hinges for ease and versatility in positioning.  And as I’ve seen, it stands quite stably – barring earthquakes of cataclysmic proportions.  Having said that, I found that piles of magazines at its feet serve a whole lot of a different purpose.

This is how it looks like today.  It contains memories from as far back as 60 years, to something I made with my hands just last night.

Three superheroes – Superman, Batman, and Spider-man. I couldn't find a better Superman poster. All I have are almost life-size... yet to be framed for the walls!

 

I love the ad on the left! I wonder what "eNTeNG" would look like as a shoe. The one on the right says, "Finally, makikilala mo na si Louis!" This was the wrapper of one of Batman's Christmas presents. Louis is a character in the classic movie, "Casablanca."

 

Piles of magazines provide additional support at the base. On a carpeted floor, I would just let the six legs of the floorscreen get stamped onto the surface. They seem to get stable that way.

 

I position the hinges such that the two end panels are parallel to each other.

The Andy Warhol-ish print was a gift from Erwin. The red Kenneth Cole ad beside it was put there because, as Brother would always joke, it was with Kenneth Cole that I made my biggest savings deposits. Hahaha!

Egg salad pandesal

I’VE NEVER been one to snub the lowly pandesal (or “pan de sal,” literally, bread with salt).  I don’t think anybody has the right to scoff at one of the barometers of the state of our national economy.  Talk about passing on to the hands of consumers even just a peso’s increase in the price of pandesal, and before you know it, the Senate would have convened to hear its case.  And oh, DZMM would launch into a full pandesal price watch.

I piled on these egg salad pandesals, my snack as I watched Top Chef Season 4 tapes last weekend. Yes, VHS tapes!

A few weeks ago, our pandesal shared the spotlight – front and center – with none other than visiting American R&B pop sensation the Justin Timberlake.  He may not have entertained a sing-song question if he was going to “bring sexy back,” but I read that when asked about any Filipino food he liked, he said, “pandesal.”

Long before Mr. Timberlake and the pandesal have shared the same breathing space, these Filipino breakfast rolls – crusty and dusted with crumbs on the outside, fluffy and chewy on the inside – have been a staple of the Filipino morning table.  As a kid, I would have tens of these, hot, sliced open, and slathered with Dari Crème butter.  A dunk in steaming hot black coffee heightened the gastronomic pleasure even further.  Crusty exterior, soft interior, melted butter permeating through the cut surface, good coffee.  Yum!

Whenever we were feeling fancier than butter, my mother would whip up her signature egg salad spread.  I don’t know why, but I’ve never liked any egg salad spread other than this one.  And I’ve never dared attempt to make it.  Its stark simplicity renders me to overthink it and with a simple dish like this, I fear to fail.

A RED VELVET VIXEN cupcake for one fine young lady!

I STILL know exactly when certain friendships in my life were formed.

About three years ago, one of the most prominent personalities here at work dragged me to the salon to get made over for the site-wide hosting job we had that evening.  I was already okay with the haircut I had the day before and the wax I streamed on with my fingers the morning of.  But no, if I were to stand next to her on stage, I better looked human at least.

I’m inclined to believe that I have a strong personality, so very very few people have managed to intimidate me.  That, and the fact that it takes so long for me to warm up to people I’ve just met.  But that first meet-up with her, the drive from the office to the salon peppered with animated conversations about people half of whom I didn’t know then (hahaha!), and just the effervescence in her voice squashed my pretend-fence and disarmed all my defenses against making new friends.

She took one look at what the stylist made of my unruly hair, smiled and said it looked better, reached out for her bottle of Kérastase anti-drying, nutri-protective leave-in spray, motioned to the stylist and said: “Honey, please put this on his hair.”  I remember smiling at my reflection on the mirror because I knew right there and then that I had found someone I could keep for life.

I associate her with Sophie Kinsella’s shopahic book series.  I can still hear her talking about shopaholic and baby as if it was just yesterday.  I remember her finally getting a Burberry shoulder bag – but not in the oft-counterfeited Burberry classic black, tan, and red trademarked check pattern.  She got it in the exploded, bigger pattern in pronounced tones of blue and white.  Clearly, while she did finally succumb to the lure of the designer bag, she did so by getting something that would still set her apart from the rest.

She knows how to put a difficulty or unfortunate event out of countenance, accentuate the positive, and turn it around.  So that it didn’t surprise me that when one person she was meeting up ran so late, she quietly rose from her chair at Starbucks, crossed the street to Louis Vuitton, and purchased a Monogram Mini Lin Speedy 30.  But the best part?  She has a good head on her shoulders enough to know that to live the good life is not to do it Rebecca Bloomwood’s way.  She’s quite responsible that way.  She knows the good life and has impeccable manners to boot.  She could’ve very well not shown up to the latecomer anymore, but she still did – her new arm candy in tow.

While she may have surrounded herself with the finer things, she has never lost sight of what she values the most in her life – the relationships she has with people around her.  I may have had an idea of what loving unconditionally or giving one’s self for others means.  But I have never seen it come to life – almost palpable – than with her and how she lives her life.  She’s the quintessential Daddy’s Girl that even when she had experienced the pain of loss, she has kept her “daughter’s love” alive and persevering.  And she has shown that a Daddy’s Girl loves her mother and can take care of her just as much.  Her brother’s children can never be far behind – she dotes on them and attends to their needs.

It surprises me sometimes how someone like her can still manage to love and care for even more people.  She has sure done it for me.  She has done so in so many ways that I feel I will never be able to thank her enough.

Today, April 16th is her birthday.  Happy birthday, Partner!  Amishoo so much!

Rediscovered object of affection – my "Meyer® 18/10 Stainless Steel Impact Bonded – For Even Heat 11 IN / 28 CM."

I’VE BEEN frying sunny-side ups and eggs over easy using the same pan from when I was still a small kid standing on a dinner chair, watching over my mother’s shoulder as she made kare-kare.

Quite clearly, our no-name, decades-old cookware set has proven to be quite useful.  I’ve never looked at any other – even at those tempting displays at Gourdo’s – except that one time when I decided to get a smallish non-stick pan for exclusive use in whipping up a superhero’s all-eggwhite, fresh white button mushrooms-and-provolone omelet.

That, and last weekend when, home alone and rummaging through stuff, I realized that I still have cookware sets sealed in their boxes – sealed for the past six years!  At least!

As I had my garlic fried rice on the top of the brunch menu in my head, I gravitated towards the ones that are wider than they are deeper.  The whole rummaging was so sudden, so unexpected, and surprisingly overwhelming, that I ended up standing transfixed in front of this one pot (or pan?), its all-stainless steel handle glistening under the rays of the mid-morning sun through the kitchen window.

I inched closer and held on to the pot’s graceful long handle, and felt the need to pay attention to the helper handle directly opposite it.  I admired the clean lines, the sensuous silhouette.  I lifted the pot and couldn’t ignore its sturdiness and weight.  Flipping it over, I read “Meyer® 18/10 Stainless Steel Impact Bonded – For Even Heat 11 IN / 28 CM.”  The sale price sticker was still on and after knowing how much I paid for it, I instinctively pulled it to my chest and wrapped my hands around it.

That very moment I knew, “I AM IN LOVE.”

Gotta love this one!
